An oil trap

Most vegetarian diets are low in fat compared to meat-based diets. It’s one of their great nutritional advantages. But don’t fall into the trap of eating a high-fat vegetarian diet. This can easily happen if you experiment with recipes from some of the popular vegetarian cookbooks.

Deep-frying in oil, topping bean casseroles with a rich cheese sauce, using shortcrust pastry, baking hearty slices and cakes (even if wholemeal) all spell lots of oil – and can be heavy on the fat. Consider the fat in an average serve of four popular vegetarian dishes:
